Carrot ginger soup. Saute some diced onion and about 5 chopped up carrots in some olive oil, add either powdered or fresh ginger to taste (we use fresh ginger juice), then simmer in veggie broth for about 20 minutes. Next, puree in a blender, then add ether a cup of coconut milk or half a cup of milk or halfnhalf. Dash of pepper, salt to taste if needed. There you go! Super easy veggie soup in about 30 or 40 minutes.
OR
Roast a small pumpkin or kurbis squash in the oven until tender, then add veggie or chicken stock, juice of one lemon, salt and pepper to taste. Puree in a blender. Can be made with or without milk/cream/coconut milk.
OR
Get a bag of dried split peas. Cook them according to the package, add some ham, carrot, onion, and/or celery if desired. SUPER easy healthy dinner.
These are some ways to eat/drink your veggies from a blender that are healthy AND taste good. Go into food with excitement and an open mind. You never know what you might enjoy!

Just eat quorn quorn and more quorn, it tastes a little bit like cardboard, it keeps you alive.

Extra virgin olive oil is the healthiest fat you can use. BUT, not for cooking. When olive oil is heated its chemistry changes and it becomes a much less healthy fat. Use olive oil uncooked, like on salads, etc. For cooking, the healthiest oil is avocado oil.
And fats in fish like salmon is a very healthy fat as well.

Sorry that I’m being annoyingly nit-picky in this thread, but it’s my field of expertise. 😛
Heating EVOO does not significantly change the nutrient profile or damage the antioxidants, and the amount of trans fat produced by the heat is negligible, so long as it’s not heated past its smoke point, which is around 375F. And, believe me, you’ll know when you’ve done this because it smokes and stinks!

You already answered this question yourself. The smoke point of unrefined avocado oil is about 480 F. It makes a good high temp cooking oil.

What type of fat/oil do you recommend for cooking that will get hotter than 375?

flaxseed oil, has the highest smoke point, IIRC. That's what I use to season my cast iron skillets with.
However, I wouldn't recommend actually cooking with it.
