Here in Michigan - it is now legal to pick up a road killed deer. (Only deer.... I dunno why you can't take an opossum or a raccoon...) It used to require a "roadkill permit" from a law enforcement officer. No longer.
Rule of thumb with roadkill - one side is usually untouched. You can usually get the backstraps and one rear haunch. The gut is usually a mess. The other consideration is how long it had been laying. In cold weather - if it is still warm you are good to go.if bloated - it's coyote bait. Best recovery method is usually caping the back - taking off the backstraps and good rear haunches. More wasteful than gutting and standard butchering - but less wasteful than leaving it to the crows.
We get donated roadkill for our canids at the Endangered Wolf Center. Fun to watch a pack of African Painted Wolves make a buck disappear in ten minutes, hooves and horns left for toys.
