Here you messed up the fact of the existence of god (which is indeed binary) and our knowledge or belief about this purpoted fact, which is NOT binary. Saying "i dont know" about the fact/claim that a god exist (or not) is a perfectly valid answer, if you actually dont know.
"We" dont make proclamations about reality, we usually make statements of what be believe or claim to know. Its people who fell down a religious rabbit hole (like you) who proclaim deities into existence, define them into existence etc..
