Because fundys like to use doublespeak. They would like to believe that everything is "just an opinion", or "just an assumption" or "just a belief". Christianity spent so much time debunking pagan faiths, that at some point along the way they started to believe that their faith was somehow beyond reproach. Now, when faced with exactly the same sorts of questions and tactics that were used to erode belief in dryads they find themselves at a loss for defensible concepts. The entire argument now consists of redefining everything around them to fit with their primitive and demonstrably incorrect worldview. Hence, no one can know, or nothing can disprove, or you guys are just like us. It's all very irritating.
