Yep - this is not even something I would ordinarily try, I've never been a fan of catfish but as it turns out,it can be pretty forking amazing done right. We got this from Blue Apron so not cheap but it could be done cheaply - and since they supply all the recipes... I don't know how long we're going to keep doing Blue Apron, but I'm liking being exposed to healthy foods I may not have ever tried.
It's kind of scary, this healthy eating think may just take this time.

Catfish can be done well, the best I've ever had is a blackened catfish taco with mango salsa and pico de gallo. So good.

I've never had catfish.
But I've had monkfish, once, a monkfish Chinese curry at a restaurant and it was fucking DELICIOUS.

I've never eaten monkfish,they're ugly as fuck but I understand them to be delicious.

It wasn't a whole monkfish, it was just like slices of it so it looked like any other fish.
What am I up to? Trying to tell myself to stop arguing with a penguin.

Got home from our "daycation" at 10:30 last night. Gonna let the kids sleep in late because I've been up since 4am and need to try and get a nap in before school.
