The squishy bit inside? Are you eating ripe or green olives? Because the green olives are usually filled with pimento (if you're lucky) or some unidentified paste that is said to be pimento. Is that what you're referring to?

I think it was green... not sure... been a few months since I had one - to try. Maybe not squishy...but a juicy semi-solid kind of texture. But a very very strong taste, pretty much sure is in the liquid. Kind of what I'd imagine motor oil to taste like

It's funny, but many of my favorite foods as an adult are things I either genuinely hated as a kid or was convinced I would hate, if I were to try them. I was a picky pain in the ass to feed until my taste buds matured. Now I'll eat just about anything.

Tbh I'd like to acquire the taste as well... that's why I was trying it in the first place. But I couldn't get used to it no matter how many times I tried. But then again my palate is very 'immature' - I haven't acquired the taste of beer or wine either.
