Ummm.... well this is just it... she told me she had fantastic sex with him every night but she wanted sex with me because, in her words not mine now, "I'm greedy."

Girl like that probably has a side piece on her side piece.  Just sayin.
I am the Infantry. I am my country’s strength in war, her deterrent in peace. I am the heart of the fight… wherever, whenever. I carry America’s faith and honor against her enemies. I am the Queen of Battle. I am what my country expects me to be, the best trained Soldier in the world. In the race for victory, I am swift, determined, and courageous, armed with a fierce will to win. Never will I fail my country’s trust. Always I fight on…through the foe, to the objective, to triumph overall. If necessary, I will fight to my death. By my steadfast courage, I have won more than 200 years of freedom. I yield not to weakness, to hunger, to cowardice, to fatigue, to superior odds, For I am mentally tough, physically strong, and morally straight. I forsake not, my country, my mission, my comrades, my sacred duty. I am relentless. I am always there, now and forever. I AM THE INFANTRY! FOLLOW ME!

That's actually option 1 because now everybody knows. Also, the point of this thought experiment was not to get hung up on assault.

TLDR would be "Your best friends partner shows sexual interest in you. Do you tell this to your best friend or not?"
I made up a whole scenario to make it easier not harder! 😬

Nah.  Even less of a dilemma than before.  Now I have nothing to feel personally guilty about.  It would just be me telling on some female because she had sexual interests.  When is that ever not true, lol?

"Hey Steve, did you know that your girlfriend was interested in men"
-Yeah Khem, I kinda did, but thx.

Well, say you do tell your best friend about it. Now you're going to be the guy that ended a 8 year long relationship.. . That's not a small thing to bear.
Or your friend don't believe you, cmon the guy has been with this chick for 8 years, he's probably going to think something like you're jealous of their relationship or something....and now you're the guy that's jealous of his best friend doing good...

Cast yourself as a third party.  Two of your friends are dating, you happen to know that one of them is interested in someone else.  Do you run your mouth about it?  Generally, no..or at least there come a time when most of us mature to the point that we realize that nothing good will come of it.

Not sure why the bolded bit changes the scenario.  Interest in me, interest in someone else........meh. I just don't think it's my business to police other peoples interests or relationships.

Yeah, I can agree with that but instead of seeing yourself as a third party when you see yourself as the guy, it just gets a lot more complicated.
Because get this, this chick knew you were best friends she is playing with the heart of your best friend whom you've known since forever... Is there a moral obligation to let him know? Yes.. Should you do it? Probably Not because you don't want to be the guy to ruin the one thing your best friend had going for him..

So the question becomes would you rather him be ignorant and happy or informed but sad

Voila moral dilemma

That's not an ethical dilemma though.
His GF is a sexual predator that is lying to him. It is your obligation to tell him, after perhaps as Losty pointed out, after you file a police report. There is no dilemma.
If he resents you for it when the truth comes out or he doesn't believe you at all, that sucks. But keeping those possibilities in mind doesn't make your choice of option 2 any more ethical. Instead its more selfish, actually. You don't want to upset the natural order and would rather let your friend get cheated on and have a sexual predator go on harrassing others? That's cowardice, not ethics.
