Just finished some leftover pork stew with dumplings I made Wednesday night.
Because I live alone and work fifty hours a week, I too cook plenty (on my days off, only one this week, 60+ hours, yay) with leftovers in mind so that I can eat home-cooking throughout the week -- this stew is a result of that approach. I'll have to do some cooking in the next day or two, probably will do homemade pizza or perhaps some Mexican food.
Not me, but my better half is making a lamb piperade for dinner.
Made seared cod with a summer succotash of corn, beans, scalions, tomato, and fairy tale eggplant, topped with pickled grape slices.
I wasn't sure I would like this but it was extremely fresh and tasty. So much chopping. My knife skills need work.
Beef ravioli, baby spinach, and vodka sauce.

After dinner and an healthy after dinner snack, I'm almost 1500 calories under budget for the day so I'm having a slice of homemade Greek lemon cake. Ending the week 4000 under budget for the week.
Scotch pie.
Made a second pass at chicken tacos tonight, this time with the benefit of guacamole and sour cream, with nachos on the side.
Much improved, I'd say. I think I need better quality chicken next time, though.
