It's easy to say "I'd be okay with someone denying a Christian a wedding cake!" because it's unlikely to ever happen.

Interesting. Can you justify your position? The cake is already baked. It’s already symbolic, the baker was just unaware of its symbolism. Are you saying that freedom of expression is retroactive?
I’m failing to see the difference between this scenario and one where the baker is blissfully unaware the entire time (say, if the customer picks up the cake alone).

Thing is, you do get to choose who you serve. Businesses and their owners have -immense- leeway to deny service. You actually have to go out of your way to run afoul of civil rights laws.
To a committed bigot, though..none of that matters. All of the other stuff is inconsequential, they want to be able to do the illegal stuff.
