The OP makes a good point, but a somewhat flawed one. It starts from the premise that the Bible is the inerrant word of God.

I don't think it is.

How do you determine which parts of the bible to believe? Or do you not use it at all?

There are two elements to that question, use and believe. I use the whole bible. I try to follow the red letters, the words of Jesus, particularly the sermon on the mount. I think he remains a great moral teacher. In terms of believe, it's hard to say. There are small but critical differences which show that these words were reported by men rather than dictated by God...

Through passion, I gain strength.
Through strength, I gain power.
Through power, I gain victory.
Through victory, my chains are broken."

Ok so in practice you follow what jesus said. Are there other teachings that you find worth practising? Not necessarily religious or philosophical, but have you read anything that made you think, hm, yea, that makes sense, I'm going to do that from now on?

Oh, and do you believe jesus's mum was a virgin and that he died and resurrected?

Yes, lots of things. There's some good stuff in Buddhism.

And no, yes and I don't know respectively.
