Well we know we can't trust your government, or the Chinese government, and we shouldn't trust ISPs because even though they might want what's best for their customers they are now a target for hackers.

It isn't at all - some of the data is the same, yes, however the logging of email metadata has never been done before, and in fact ISPs and Telcos have worked out in recent years that they don't need to store sensitive usage information for long periods of time, and routinely purge it as a security measure.
