The problem with your example, is that both the child and the parent have no magical powers. They are mortal beings, caught in a scenario where, the child will die unless the parent sacrifices their life. They are both subject to the physical laws of the universe, and the whims of the sadistic murderer.
In the Jesus dying "for our sins" scenario, he is literally sacrificing himself, to him self, to act as a loophole for rules he created.
Why couldn't the Biblical "God" character just forgive humanity?
You'd believe if you just opened your heart" is a terrible argument for religion. It's basically saying, "If you bias yourself enough, you can convince yourself that this is true." If religion were true, people wouldn't need faith to believe it -- it would be supported by good evidence.
