The most chilling account I've ever seen of this particularly shameful period in history has to be the BBC/HBO co-production Conspiracy, which I watched for the umpteenth time last night. It's a dramatised recreation of the infamous Wansee Conference which took place in January 1942, at which "The Final Solution to the Jewish Question" was unveiled almost as a fait accompli amidst rich food and fine wine. Truly terrifying and highly recommended.
