Symbolically, a blood sacrifice is necessary to end a tradition of blood sacrifice is it not? That was the point of the sacrifice.

Do you accept that humans are not perfect? Then you accept we have reason to feel guilty at some point, if we face up to our limitations.
People found that giving something they prized felt like they were redressing a balance. Far better to be charitable than throw it away, but they thought payment to god/s weren't to be made to any man. Debt is owed to the debtor. Personal debts of imperfection are owed to whatever is perceived as perfect.
We strive to overcome our imperfection.
Some philosophies suggest we should learn to be happy with our imperfection. This is a model of an unjust world where there is reduced reason to act fairly. It's easy to see how humans thought sacrifice a better model.
