The difference being that Jesus' life is full of outrageous claims of miracles, renown, and divinity. Other historical figures cannot even be held to the same light of scrutiny for being philosophers. For instance, even if Plato wasn't real, those writings attributed to him do not condemn a world's population to eternal damnation if they are not adhered to or believed in. Does it also make a lick of difference if it truly turns out that Shakespeare is not the true author of all the works of art that were supposedly written by him? The greater and more pressing the claim, the more evidence and proof of its authenticity is required.
