Jesus is not called Immanuel (or Emmanuel) anywhere in the New Testament. If he is, then please provide book, chapter, and verse.
In addition, this is a prophecy that concerns King Ahaz. He is told By Isaiah that the child will be born to a young woman (not a virgin) and that by the time he is grown the threat from foreign kings will be ended when they are defeated..
This promise was kept by 'God' as shown in 2 Kings 16:9.
Assyria defeated the two rival kings and Ahaz and his people would be safe.

You'd believe if you just opened your heart" is a terrible argument for religion. It's basically saying, "If you bias yourself enough, you can convince yourself that this is true." If religion were true, people wouldn't need faith to believe it -- it would be supported by good evidence.
