Before you use it, do you drain it? The easiest way to do that is to press down on it with paper towels to get some of the water out, then put it on a few sheets of paper towels and then put a few more on top and put something heavy on top of it, like a plate with a can of food on top (tonight I used a frying pan with a kettle full of water on top) and leave it for at least 15 mins, but ideally more like 30. That should get it just about right to cook with. If you leave too much water in there it will suck.
It's also good to experiment with what marinades you prefer, if you're using it in a stir fry or a rice or noodle dish. I usually mix together some sesame oil and soy sauce and just dump the tofu pieces in there for a few mins before chucking them in the pan.
