I think the most important thing is for you to watch out for collateral damage i.e. kids. The whole situation is pure madness and she's blackmailing you with kids, and that is fucked up. In the end Catholicism (as its shown by her hypocrisy) its just an excuse for her selfish behaviour. You're in deep shit man, but I have no sure fire sollution. You may want to start keeping evidence of her behaviour in case you'll ever need it.

I agree that the most important thing above all is to retain custody of your child and to not let your child be adversely affected by it. Bickering about religion isn't worth it if A)you lose custody B)it upsets the child.

I think he meant upset in the context of deliberately causing stress or strain to the emotional state of the child. Typical, average pediatric psychiatric profiles tends to show that witnessing parents arguing is detrimental to emotional growth in a child and should be either kept to a minimum or out of sight and hearing of the child.

Though Gringo's child is facing even worse emotional damage; being brought up as a catholic.

You've obviously never dealt with custody situations. While the law can demand certain things of either or both of the parties involved, it is the goodwill between the two parties that will make any kind of kid exchange possible. Causing bad blood between a person you are trying to share custody of a child with, or in this case reconcile with completely and share a life, well, that is just dumb. He needs to speak with her and find some common ground, there is not enough force on the planet to make a woman do what she doesn't want to when it involves her child.
