You know, of all the numerous Roman Emperors, Vespasian was one of my favourites since as you say, he was by what we know of him one of the actually hardworking and decent Emperors. Even his Domitian, who was considered the crueler of his two sons who followed him is having his reputation altered a little because his rule consolidating the power of the empire.

The Olympic Pantheon for me too, from the days when gods got off their arses and actually did something. I've always had a sneaking regard for Zeus, a randy old goat who really doesn't give a shit nor takes shit from anyone - apart from his sister/wife Hera, who really wears the trousers in that relationship. At least that's how I picture them.

Well in complete fairness to Zeus, Hera always took her anger out on the mortals, and Zeus just had to roll his eyes at her and tell her she's not allowed to help out her favourite mortals.
Then of course she'd take it out on Hercules or help out Jason just to annoy him. Oh, Hera XD

I have a soft spot for fertility gods/goddesses, and that's not a euphanism for anything. Whichever civilisation it is, the fertility deity is the one who typically gives a damn about the mortals in some way. Usually.

But these are only Daedric Princes. Not so much Gods, but more the leaders of races living on different planes of existence. The Gods would be the 9 (or possibly 8)

Akatosh - The Dragon God of Time and the chief god of the pantheon
Arkay - God of Life and Death
Dibella - Goddess of Beauty
Julianos - God of Wisdom and Logic
Kynareth - Goddess of Nature
Mara - Mother Goddess and Goddess of Love
Stendarr - God of Mercy
Zenithar - God of Work and Commerce
and possibly Talos/Tiber Septim - God of War and Governance

I have no interest in the 8/9 divines. The Daedric Princes are often referred to and worshiped as gods. The are certainly far more powerful than humans so I think I can safely choose them as my favorite gods.

Having given this some little thought, if I had the choice I might for some of the Discworld gods. After all, they at least pay their followers the courtesy of existing. Also their existence is ties directly to the level of belief in them, such that they evaporate neatly and tidily when people no longer believe in them.

One in particular is Nuggan:

the locally worshipped monotheistic and omnipotent God of Borogravia, but elsewhere he is known as the God of Paperclips, Correct Things in the Right Place in Small Desk Stationery Sets, and Unnecessary Paperwork. He usually sports a fussy little moustache.

His holy writ (the Book of Nuggan) is a Living Testament, into which more material is added on a regular basis. All believers regularly add pages to the ring binder Appendices, which then eventually fill with more commandments, usually Abominations unto Nuggan. By the time of [the novel] Monstrous Regiment, his commandments were becoming rather nonsensical — among his ever-growing list of Abominations (Which even the other gods of the Discworld thought are a little over the top) were cats, the colour blue, Dwarfs, oysters, mushrooms, chocolate, garlic, babies, cheese, the smell of beets, ears, jigsaw puzzles, crop rotation, shirts with six buttons, and rocks. He is also very opposed to the clacks [semaphore tower] system, as it interferes with the prayers of the faithful. [...] He is now dead because belief has switched to his abominations
