Well, Jesus said:
Matthew 5:17-20

The Fulfillment of the Law

17 “Do not think that I have come to abolish the Law or the Prophets; I have not come to abolish them but to fulfill them. 18 For truly I tell you, until heaven and earth disappear, not the smallest letter, not the least stroke of a pen, will by any means disappear from the Law until everything is accomplished. 19 Therefore anyone who sets aside one of the least of these commands and teaches others accordingly will be called least in the kingdom of heaven, but whoever practices and teaches these commands will be called great in the kingdom of heaven. 20 For I tell you that unless your righteousness surpasses that of the Pharisees and the teachers of the law, you will certainly not enter the kingdom of heaven.

And apparently "fulfill" is synonymous with abolish.

According to what I ahve heard, he "fulfilled" them when he died.
Matthew 27:50

50 And when Jesus had cried out again in a loud voice, he gave up his spirit.
Mark 15:37

37 With a loud cry, Jesus breathed his last.
Luke 23:46

46 Jesus called out with a loud voice, “Father, into your hands I commit my spirit.” When he had said this, he breathed his last.
John 19:30

30 When he had received the drink, Jesus said, “It is finished.” With that, he bowed his head and gave up his spirit.

Apparently, when he said "It is finished" he meant that the laws had been fulfilled (basically null and void...but not abolished!). Though, heaven and earth did not disappear when he said that (was everything really finished?) And why did he only say that in one of the four versions?). At least, that is the interpretation some Christians have given me.

I figured that, I just wanted to explain anyway. Maybe someone will try to challenge it, or maybe their argument that the OT doesn't count anymore is really that weak.

The OT counts as it always did. Some people insist on pre Christ interpretation, which of course conflicts with Christ's interpretation.

It must suck not being to eat pork, wear clothing made from two different kinds of fabric, cut head at side of your head or clip off edges of beard (I'm being mild with these examples)

Maybe you don't understand the laws?
I can see numerous reasons why some of those "laws" were in place.
