If I follow through and try this I'll have to post a picture. Do you use a larger size wafer? The biscuits I'm thinking of are maybe 5 to 7 cm wide. I've never seen a bigger one .. or is this like a cup cake, a serving for one?

Preferably, over a large flat plate or tray.... so you get many biscuits forming each layer. Kinda like this:
Looks like you could probably achieve the wafer with homemade graham cracker crust. Looks in that picture to be about 10cm or so across, so I'd imaging pressing some warm graham cracker crust on a flat surface with wax/parchment paper and then flipping it over onto the pile would be perfect.

Mix some roasted crushed espresso beans in with the graham and butter.

Pete's and Starbucks sell bags of candied expresso beans which when crushed might make a nice substitute over the top of Poca's cake. I'd love to make this for my stepson's girlfriend but she is anti- gluten and wheat and god only knows what else by now.

Since my wife insists on running the AC at night, regardless of the temperature outside, and on wrapping herself tightly in every available blanket, I got tired of trying to get warm in my own bed, got up, dressed, and went to work two hours early to get a jump on what will be a long day.
