Manager needs to be fired, at the very least IMHO. Allowing an obviously ill employee to work in food service is a very serious health issue.

Yuck.... Thats why when i want a good meal i go to Wendys.... At wendys that kind of stuff doesn't happen.

My managers at least cared more about the health of the food and employees. Sickness can be contagious. There was one instance where I came in to work, and found my lost dog dead by the side on the road on the way to work. My manager offered to let me go home because I was broken up about it.
You do learn some things about the food industry when working there. if you really want to know how much effort th kitchen staff puts into keeping the place clean, sneak in there and pull the grill away from the wall. Look in the harder to reach areas of the kitchen. If there isn't a layer of filth behind the machines, or under the tables, or whatever, it's a good place to eat. Also check to make sure they aren't putting meat above fruits and vegetables in the freezer.
