Speaking only for myself, I honestly can't recall a time when I believed the doctrines that we were exposed to during Mass. It all seemed rather shabby and contrived.
I think the closest I ever came to trying actually put a Catholic dogma to work was when I tried to convince one of my brothers to kill himself so I wouldn't feel bad for stealing apples from a neighbouring orchard. I was six and he was eleven, and all I got for my trouble was a belt round the earhole and ratted out to my parents.

I just said that they are making up their own beliefs and deviating away from Christian morals and beliefs

I'd be much nicer about Christians if more of them would do exactly that. Christian morals and beliefs are - largely - primitive and savage to the point of being anti-humanity.
The further a self-styled Christian removes himself from the core beliefs of the faith, the better I can get on with him.

I wouldn't call Christianity scapegoating, cannibalism whatever.
We believe God came into human form to take the punishment that everyone else should suffer individually. He knew what he had to do.

But what is to be gained by that? Taking punishment for the sins of the world does nothing to expiate those sins. By analogy, if I rob a bank and you agree to go to prison in my place, how does that absolve me of the guilt of robbing the bank in the first place?
Furthermore, if God took the punishment for everyone in the world, then why does God still mete out punishment?
Lastly, it (scourging, humiliation, crucifixion) seems a pretty weak punishment for the sins of the world. Billions of people committing billions of sins every hour of every day - sins of thought as well as of action - all obviated by the son of God having a single really bad day? Come on.
