Five days later, the cat showed up in a neighbor's yard alive, but weak, dehydrated and in need of medical attention.
Where does it say he dug himself out five days later? He may have dug himself out five minutes later, and arrived at the neighbour's five days later.

Again, animals often hide when they are sick. The likely explanation is that after being hit by a car, the cat went into a coma. The owner and his neighbor could not have known this so they buried the poor animal. The cat dug itself up and instinctively hid because that is what some animals do when they are hurt. Eventually it made its way home to its owner. Because the neighbors are religious they then interpreted this natural but unusual event to god.
If someone believes that an all powerful deity brought a cat back to life it is reasonable to ask why? What purpose would a god have in bringing some random cat back to life when there are dead children whose parents would take far more joy in their resurrection than the owner did with his cat. It would be more impressive for an embalmed child to rise from its coffin in front of the funeral attendants than for a cat to leave its unwatched grave.

Or... the cat dug itself out a day later then spent a few days in the woods drawing pentagrams on the ground and chanting. Local residents now recall the haunting and hideous meowing that seemed to float through the air for a few days, followed by a deep, throaty laughter a couple of days later, and a blood-red moon the next night.
