Actually, biochemical decay starts immediately upon cessation of circulation, and progress at different rates for different organs and cells.
It may not stink for a while, but by the time it starts to stink from bacterial action, it has already gone a long way down the path of irreversible chemical decay.

Current theory of stellar evolution and climate modeling suggests there less than 1 billion years before earth in its current orbit would become too hot to support complex organism with biochemistry similar to ours.
