Pumpkins are a type of squash. They're domesticated from the same plant, thus all pumpkins are squashes but not all squashes are pumpkins. Like all cattle are mammals. But we tend to use the more specific term when talking about food - ie this is cow meat (or beef) this is lamb meat, etc, instead of just labelling it "mammal meat" which could mean anything. Actually, that variety of pumpkin is commonly referred to as a jack-o-lantern. They have two uses. One for carving and the other for roasting pumpkin seeds. You don't actually eat that kind of pumpkin, at least here in the states we don't. Pumpkin pie filling comes from a different type of pumpkin.

It sure looks like the type of pumpkin we used for seeds when I was a kid...what's the difference?

We do use them for seeds. We just don't eat the actual pumpkin. I lived down the street from a farmer whom I bought pumpkins from every fall. He never said why you can't eat them, just that we don't eat them. Perhaps I will ask.

The canned pumpkin isn't all pumpkin. What portion of it -is- pumpkin is "field pumpkin" smaller, denser varieties selected for commercial production and specifically for canning (sweeter, holds up better to process).
You could eat them, Judi..but they're tasteless at best, disgusting at worst. Ever notice the carving pumpkins flesh is super light? Water balloons.
