What are you cooking/eating right now?

Roasted some vegetables earlier -- I sliced up a zucchini, a daikon, a beet, 2 carrots, 2 sweet potatoes and a celeriac, then tossed them in a bowl with olive oil, salt and pepper. I spread them in a single layer on a couple of baking sheets, and roasted them at 350°F for about 35 minutes. Nom!
Also picked up some samosas at the grocery store and had one of those too. RE: What are you cooking/eating right now?

Breakfast this morning: coffee, muesli, smoothie made with pineapple, blueberries, strawberries, yogurt, milk, and orange/pineapple juice:
Had to toss the bacon, but breakfast of andouille, eggs, and homemade waffles was nonetheless delish.
Had some brown rice with shrimp, spinach, peas, and a sauce of peanut butter, sri racha and soy sauce. Bit too much soy sauce, but other than that, it's hard to beat.
Working on meatloaf for the crockpot, but my eggs expired. Looking at eggless recipes. Other than that, the filler is just salt and pepper, oyster crackers, stale bread dice, and onions. Gonna have carrots, too. Maybe spinach. And some brown rice.

Home made Thai Peanut Chicken. Don't know if it's "authentic," but it's so damned good I don't care.
