Whipped up a batch of potato/carrot/onion pancakes.
- Finely chop 1 small onion and put into a bowl.
- Peel and coarsely grate 1 large potato and 3 carrots (I used a food processor with a grating disk, but I've also done this by hand with a box grater.)
- Add 2 eggs, a bit of flour (about a quarter of a cup; I wouldn't go more than half a cup), salt, pepper, and any other spices you want to add.
Heat up a frying pan on medium-high heat. Put the oven on low for keeping the pancakes warm as you make them. When the frying pan is hot, pour in a couple of tablespoons of vegetable oil and swish it around, then add scoops of the vegetable mixture (about a quarter-cup per pancake) and flatten them out, without crowding. I can get 3 into my frying pan; you can also use an electric frying pan, which will hold 5-6. If you have a non-stick pan you can reduce the amount of oil but I wouldn't cut it out completely.
Fry on the first side till the pancakes hold together, then flip and continue frying till both sides are nicely browned. Put the cooked pancakes into the oven, clean any stray bits of batter out of the frying pan, let the pan reheat and replenish with a bit more oil, and repeat till the batter is used up. The shredded vegetables will release extra liquid, which will pool in the bottom of the mixing bowl; just dump that when you're finished.
Serve with sour cream and freshly ground black pepper.

Dinner was sushi, kettle chips, and chocolate cake. Always lovely.
Kinda been having a hankering for pulled pork. Usually I use pork shoulder, cheap BBQ sauce, Dr. pepper and onion soup mix. But I love sauvignonb blanc and onder if that can be used in place of Dr. pepper (not that that was bad).

We use citrus juice to bring some acid and sweetness when we do pulled pork. No reason in the world white wine wouldn't work in the same capacity, though you might want to tweak it with some extra sweetness if that's your thing.

Busy crock pots yesterday and today.

Blackberry beef (new recipe that still needs a little tweaking)
Seafood chowder (clams, tilapia, shrimp, scallops and lobster tail)
Persian Ghormeh Sabzi (don't know if it's authentic, but it sure it tasty)
Today:
My world famous bean dip (yes, I'm a legend in my own mind)
Thai peanut chicken
Mongolian beef
Once I'm done, I'll have at least six weeks worth of lunches ready to go. I eat good at work!

Halfway through cooking Moroccan lamb stew. In addition to the lamb it has onion, garlic, cumin, a bay leaf, cinnamon, ginger, pepper and sumac. About to take it out of the oven, add yams and dried apricots, and finish on the stovetop.
