Stuffed portabellos. Yes, I know they've been done before, but my recipe:

A couple of large portabellos with the stems removed
1/3 cup of zucchini, chopped fine
1/4 cup of red onion, chopped fine
1 medium tomato (I use a roma, usually), sliced and diced
two cloves of garlic, minced
a couple of leaves of fresh basil, again chopped fine
1/2 cup of shredded asiago or mozzarella cheese
1 tsp olive oil
1 tbsp butter

Mix the tomato, onion, zucchini, and garlic into a bowl with the olive oil. Melt the butter and brush it onto the mushroom caps, outside and in; use the remainder to brush a largish piece of aluminum foil. Grind some black pepper onto the foil, while you're at it.

Fill the mushroom caps with the vegetable mixture, tamping it down, and then top it with the grated cheese. Wrap both mushrooms in the prepared foil (taking care to leave a little room above the mushrooms), and either bake in the oven at 325 for 20 or so minutes, or put over your charcoal for 15-25 minutes depending on how hot the coals are.

Goes well with a good steak, as seen here (I think I had a little gouda cheese on this one, must have been out of asiago? It's still pretty damned good!):

... or if you're a vegetarian, makes a good main course on its own, though you'll need to get your proteins from another dish.
