Sounds delish Huggy. I make salmon a few different ways, but my favorite is making a large foil pocket, spraying the inside with cooking spray, putting the salmon filet in, with baby reds, broccoli crowns, lemon wedges, lemon juice, several pads of real butter and dill seasoning. Close it up nice and tight and either put it on the grill or put it in the oven to steam for 45 minutes.

That sounds good! the only thing is, y'all most likely use Atlantic salmon over on the east coast.

It's all we get here and it's already expensive. What kind do you use? I honestly thought salmon was salmon. I didn't know there was more than one kind, but I'm willing to get a free education out of this.

Real Atlantic salmon is endangered so you're not allowed to catch them in the US. What you're eating is farmed and since wild salmon get their red / pink flesh color from their natural diet, farmed salmon is artificially dyed to look that color.
There are 5 different species of salmon in Alaska
Atlantic Salmon belongs to a different genus.

The only ones Alaskans eat are Chinook (King), Sockeye (Red), and Coho (Silver). Chum (Dog) and Pink (Humpback) are considered trash, Chum is actually fed to the dogs. Recently they re-branded chum to "Keta" to fool unsuspecting consumers.

Interesting. I suspect what we get on the west coast can be anyone of those. My father-in-law would smoke salmon every season and all I ever heard him say is to only get wild caught salmon. He thought there was a real difference with farm raised.
I would have guessed that "Chum" (aka "Dog" salmon?) would be inferior. Never would have guessed it of the others.

Pink is ok smoked, don't think I ever had smoked chum. I have had chum cooked normally, and it wasn't pleasant.
White flesh with a real mushy consistency.

Yeah, mushy isn't pleasant with fish.
At the opposite end of things I fried up some tuna steak the other day and had it on a sandwich. Better than a hamburger with the consistency of a beef steak.
