For anything more complicated, you'll either need to learn an instrument or learn how to read music -- preferably both. I recommend piano, as a piano keyboard is a standard feature in most music software packages
Failing that, recruit 3 or 4 enthusiastic beginners, set up in someone's garage with borrowed instruments, and have at it. (At very least you'll be able to claim "I was in a band once!")
I used to be in a band, The Fat Bastards. We went through a stage.

If you have Linux and want to write in classical music notation on staves, and also immediately listen to what you are writing, I can recommend MuseScore as a light and simple solution for composing.

Okay, if I'm understanding this correctly, you're trying for either something like Luther Perkins' guitar work with Johnny Cash or Beethoven. A very strange dichotomy indeed.
For what it's worth, I don't know much about the software side of the equation. Besides the occasional playing with an iPad app, the only time I can remember using software to make music is when I transcribed arrangements for my cigar box guitar into OpenOffice Word.

Yes, FL is fruityloops. Honestly, classical isn't what any software is best at, but they all have instrument packs.

I've been in a number of rock bands over the years, usually as keyboard player and singer. Only one of the bands actually played a paid show, for a Christmas party.
For the last 6½ years I've been playing woodwinds (and very occasionally some keyboards) in several community concert bands, and we play lots of gigs. Much better.

This looks like a blurred screenshot of FL Studio, which I have. I like it but I haven't tried too much else. You get free updates. If you are interested in electronic music, the Dance Music Manual helped me.I read a whole lot of other stuff but a lot of that was technical stuff which I don't know if it helped my music much. With something like that (sequencer)you don't really need to be able to read sheet music but you need to know what the notes mean and where they go and have some music theory knowledge to really do well. I read some books that had music theory and I have a background as a crappy keyboard player to help me.
If you couldn't guess from my user name, I make post-Industrial music.
