But the Electoral College doesn’t choose candidates. Ever. Their sole function is to vote for President and Vice-President.

Don't we at least have to get to the point where there is a Democratic nominee and VP candidate before we leapfrog the non-existent candidate into office?

Nah, it’s just an interesting ‘what if’ hypothetical. But I take your point - the odds of both candidates croaking before the election are so slim as to be not worth seriously considering.
