Share your favorite created recipe

OK, the purpose of this thread is to come up with something you believed would taste good and it actually did. In short your cooking experiments that actually worked out. I start with something simple I created.
All you need is a tomato, a slice of Mozarella, some butter, a slice of white bread and a can of anchovies. You butter the bread, put Mozarelly, tomato and anchovies on top and put it into the oven until the Mozarella melts. Simply delicious.

Ok, recipe. 5 Minute Sort Of Curry: If you've got any leftover meat in the fridge (or left over soy bean curd for the meatless among us) slice it really, REALLY thin, warm it up in some olive oil, add some curry powder (or just plain cumin), and serve over rice. If you haven't got rice, serve over your noodles of choice. If you haven't got noodles, eat it straight from the pan, all the while mentally chastising yourself for have neither rice nor noodles in the house.

Ice-cream taco.
Make a brandy snap recipe, make some thinnish circles and hang them on a line. That's the taco shell.
Fill with Neapolitan icecream and sprinkle grated white chocolate on top. :-)

World's Best Gazpacho (based on many summers of refinement):
4 pounds of tomatoes blendered into juice, either roma or fancy heirloom if you get a deal
(sub in some watermelon for the tomatoes if its handier)
1 large sweet white onion diced
1/2 large sweet red onion diced
2 finely diced jalapeños
1 lg european cucumber diced
3 large red bell peppers grilled, peeled and diced
3 ears of sweet white corn half way cooked, then cut from the cob
3/4 cup best quality olive oil you can find
1/2 cup red wine vinegar

My favorite simple recipe that I make all the time:
Fresh asparagus:
1 Bunch of Asparagus, trimmed
2 Cloves of Garlic, minced
Kosher Salt and Fresh Ground Pepper
Lemon Juice/Zest
Olive Oil
Balsamic Vinegar
Put the asparagus in a glass baking dish, preheat oven to 425 F (220 C)
Drizzle about 1 TBSP Olive Oil, Balsamic, and Lemon Juice
Toss in Minced Garlic, lemon zest, and salt and pepper
Roast for 12-15 mins.
Enjoy.

Lamb Chili
1 pound ground lamb
2 pounds lamb chops cubed into 1 in squares
2 packets chili seasoning
1/2 teaspoon black pepper
1 teaspoon paprika
1 tbsp ground cayenne
1/4 tsp garlic salt
1/2 bottle of tobasco sauce
1 green bell pepper coarsely chopped
1 red bell pepper coarsely chopped
1 large purple onion thinly sliced
4-6 small tomatillos quartered
2 heirloom tomatoes chopped
1 bunch of green onions sliced
6 cloves of garlic minced
5 stalks of celery thinly sliced
4 habenaro peppers minced
4 small shallots whole
2 8oz cans of tomato sauce
1 can of tomato paste
1 can of pinto beans
2 cans of kidney beans
1 tiny drop of The Source

But also, I've done salsa criolla before, but can't find the recipe. Here's another that looks similar;
Ingredients:
bell pepper - 2, chopped (red, yellow, or green)
onion - 1, chopped
tomato - 1, chopped
garlic - 1 clove, chopped
olive oil - as needed
red wine vinegar - as needed
crushed red pepper - to taste
oregano - to taste
salt - to taste
Instructions:
1. Chop the bell peppers, onion, tomato, and garlic. Place in a single large bowl or two smaller bowls (for two different spiciness levels).
2. Drizzle the olive oil and red wine vinegar over the vegetables until wet. Mix well.
3. Add the crushed red pepper, oregano, and salt to taste. Add more crushed red pepper to make a spicier batch.
4. Serve with bread, empanadas, or meat. Enjoy!
