For instance when a lamb was sacrificed it had to be without blemish, symbolizing Jesus who was the lamb of god and without sin. Jesus is also the high priest that stands between God and man making Intercession on man's behalf.

The Priests job was to make intercession for the people (through sacrifices and offerings ect.) and had to be without blemish just like the aforementioned lamb, This is to symbolize Jesus in the role of the High Priest who was without sin, interceding on our behalf.
