I also have suffered stab / puncture wounds from a number of pointy things (nails, screwdriver, a dart, etc) and the resulting wound was always smaller than you might expect.
I also see no problem with a 6mm wound from a 6.5mm bullet - and neither did the pathologist who did the autopsy.
Likewise, I am no expert on tissue elasticity - but I'll go out on a limb and suggest that the fact that such a term exists suggests that tissue is in fact, elastic to one degree or another.
