Yea I'm in the same boat as a couple of you. I did it when I was younger out of habit. Then I started trying to not say it. I'll say it every now and then, but mostly I don't. Then there are the people that feel like you're insulting them or something if you don't say it. Or the people that say, "God bless you." I really don't like that one.
I worked with this mexican guy that would get mad if I didn't say salud every time he sneezed. He also believed the bible is nonfiction, the talking snake was real, adam and eve, etc. So he was a real winner.

I still say "good bless you" out of habit. It's just a kind gesture and I don't think too much about it.

Shit if immigration came to the place I work, we would lose over half the workforce. Literally. We bring in a lot of temps, who are almost 100% not legal.

I never say it and have been chided by a couple of people for not doing so. When people say it to me, I usually thank them since they mean well.

I didn't like it when I was a xtian. It just sounds stupid. Why do I need to be blessed for sneezing?
If atheists say it it is just a relic left over from the brainwashing. My favorite relic is goddammit. I'm not letting it go as it just rolls of my tounge so nicely.

I say nothing. If the sneeze was extremely massive & their nose starts bleeding or something I might ask if they are OK.
