Evolution.
That seems like an odd question to ask. Teach something you're familiar with, that the students are likely to find interesting.

It's a sad thing to know scientific people are leaving the States because of creationism, but I wouldn't ask you to martyr yourself by staying here for the small chance of this country turning back to being one of the best in the world scientifically.

You can start by teaching them that Bruce Springsteen and Jon Bon Jovi weren't founding fathers and that Snooki didn't invent MTV. Kidding aside, these kids are bored to tears most every day. I don't care what you teach; just make sure they remember what is taught.
