What are you cooking/eating right now?

Attempting a chicken tikka masala with mixed veggies in my crockpot, as per this recipe.
Many things different, though. I accidentally bought crushed tomatoes rather than tomato puree (I think this might actually work better, though). I don't tolerate heavy cream so well, so I used almond milk. I also didn't use cornstartch. Seemed too artificial. It's thick enough as it is, thankfully. I ran out of cinnamon, apparently. I used onion flakes and garlic powder, for convenience. Not into bay leaves. Added a frozen veggie medley with carrots, broccoli, cauliflower and maybe some other things. All in all, not fixing to be a disaster.

Made a Moroccan lamb stew in my Dutch oven:
Just finished a slice of chocolate frosted key lime cake.

Macerating dates in lime juice and rum for some sort of cake, TBA.

I have almond milk and I have lactose free milk. I've used the latter and it seems to have the same cooking properties as regular milk (like thickening into sauce and whatnot). I've been too afraid to try Almond milk, though! How does that cook up? Does it "thicken"? Ps your food sounds delicious! My family cooked up a honey ham glazed in cherry something, with deviled eggs (hAlf egg yolk, half avocado) and some ranch style beans. ^_^

I really want to crockpot a ham, and I was thinking cherry soda would be part of the mix. Cherry something, indeed.
It seems like it kind of thickened, but it was pretty subtle. And that's the way I needed it to be. If I had thrown in any cornstarch (which I think is more suited to Chinese), it wouldn't have been too good. I served this with brown rice.

I went off of an "Easy Indian Butter Chicken" recipe tonight, again for the crockpot (which this doesn't call for). I added frozen mixed veggies (as for a pot pie), and fresh carrots and spinach. I didn't use butter or any substitute. I also replaced heavy cream with almond milk. Ended up using 2 cups of almond milk vs. the three called for, and almost twice the amount of tomato product (in my case, crushed). Eyeballed all the seasonings. Used a LOT of garam masala.

Dinner tonight: a couple of flatbread sandwiches. I smoked chicken, made a spread of sour cream, basil, olive oil, and pepper, put on a mix of spinach and kale for greenery, sliced some tomato and bell pepper. Gouda cheese as well. Good for improv food.
