What are you cooking/eating right now?

Kitty made enough waffles to feed an army - us and two teenage boys - I had one, diet intact - and there's enough batter left over to make waffles for another army.
So I'm making Belgian waffles for the freezer.
A bag of Aldi cheese and onion crisps.
Had the tail piece of the steelhead we had for dinner Thursday night left, so I seasoned it with lemon pepper and seared it in some light olive oil, and tossed the most beautiful piece of crispy skin in the trash.
Put it on toasted five seed bread with Dijon and light aioli. OMFG RE: What are you cooking/eating right now?

Earlier, I had a taco salad made with my grilled chicken, lettuce, tomatoes, green onions, cilantro, avocado, grated cheddar cheese, and sliced jalapeño, over tortilla chips, topped with sour cream and salsa.

Partially sliced 17 pounds of those tomatoes, then boiled them to remove the skins. Started this process around 8 last night. Drained most of the water off. Now reducing the tomatoes further, after chopping them up, in order to make a partial paste/sauce. When all is said and done, I will end up with about 20-25 pounds of sauce from 35 pounds of tomatoes. $12.00 isn't a bad investment for all of that. Need to get some canning jars today so I can can it all up for my pantry.
