I made potato/carrot/onion/celery pancakes today. Coarse-grated a large potato and 3 carrots in the food processor, added chopped onion and celery, 3 eggs, a bit of flour, a bit of water, and salt and pepper. Fried in vegetable oil 3 at a time and served with sour cream.
Just snagged a moussaka recipe off the Internet and am heading downstairs to give it a go.
Moussaka turned out really well.
Bottom layer, in a buttered glass dish: Thinly sliced potatoes. Second layer: Meat sauce made with sauteed onion and garlic, a pound of ground lamb, half a jar of a good spaghetti sauce, and about half a teaspoon of cinnamon. Third layer: Eggplant (sliced, salted, and then rinsed and dried 30 minutes later, drizzled with olive oil and pre-baked in the oven for about 20 minutes). Top layer: Bechamel sauce (1/4 cup unsalted butter and 1/4 cup flour cooked into a roux, plus 2 cups of lukewarm milk). Once it was thickened and off the heat I added an egg yolk, some minced-up Gouda (didn't have any Parmesan or Romano in the house), salt, pepper, and nutmeg. Baked it for about 45 minutes at 350°F and then let it sit on a cooling rack for half an hour before serving.
Just had willapa bay oysters, KG had razor clams - at the beach in Newport, Oregon.
I'm totally stealing that moussaka recipe.
I just had Chinese crab, squid sushi, octopus sushi, pizza, more fried squid type rings. Mussels in Thai sauce, prawns in Mongolian sauce with saffron rice. I think that's what the rice is called.
For desert I had strawberry mouse cake with chocolate mud cake, and chocolate moose with crem bruley. It was all you can eat so I just treated it as eat as much as you can but took quite small portions. Still ate about 4 plates worth though. Are you ready for the fire? We are firemen. WE ARE FIREMEN! The heat doesn’t bother us. We live in the heat. We train in the heat. It tells us that we’re ready, we’re at home, we’re where we’re supposed to be. Flames don’t intimidate us. What do we do? We control the flame. We control them. We move the flames where we want to. And then we extinguish them. Impersonation is treason.
I'm not back to eating normally yet. I dont know what I will do if I don't get better soon. This virus has caused me to lose ten pounds in the last six days. That's not good.

Had a salad: bagged salad, shrimp, grated cheddar, and a few oyster crackers. Some sort of ginger dressing.
