Funny, I just had a very similar conversation with someone a few days ago.
This weekend, I'm making chachouka - it's a versatile north African dish - you can make it with veggies, meat and eggs. It normally has tomatoes in it too. I'm sure there are recipes on the web. I pulled a cookbook off my shelf and found 7 recipes in there.
Also going to make hummus this weekend and next week going to make couscous with fish - more north African-style food.

When I get bored with what I'm eating, I change cuisines. So far I'm decent with Italian and Mexican food, damned good on a grill, passably good at Greek and North African stuff, and learning more Middle Eastern stuff. Next on the learning schedule is Indian and South Asian cuisine.

I'm kind of reliant on a crockpot. Having not read through this thread fully yet, I'm not sure you have access to one. If you do, would you try a chicken pot pie with a Pillsbury biscuit topping? That was pretty easy to make, and bloody good. Just remember to cook the biscuits/biscuit dough beforehand. It takes FOREVER in the crockpot.

I've been liking fish tacos when I go out. That's something I'm dying to make on my own (probably not a crockpot dish, but whatevs).

Sliver a little beef or chicken, fry it in some corn oil and lime juice with a sprinkle of cumin, some oregano, some freshly chopped garlic, black pepper, and Tapatio. Put it on a warmed white corn tortilla with a sprinkle of lettuce and some diced tomato. I'm very there.

It may sound odd, but it happens to be simple and pretty goddam yup: Fish and apples.
Take some thick fillets of a not-too-fishy-fish (I like cod or haddock for this), oil them lightly, sprinkle with cumin (how much depends on you), layer with slices of whatever variety of apple you like, wrap the whole thing in foil and bake or grill til done. Serve with anything but asparagus.
