European Vacation

We've decided 2019 is our year to do our first European vacation together. Two-ish weeks, probably starting in Amsterdam, but we don't want to just stay in the same place, and our return flight can be from our final stop.
Obviously we will necessarily have to be selective.
For such a trip, what's your itinerary, and why?

Where ever else you go, don't miss Athens, Rome or Prague. Why? Because you'll regret it if you do.

Visit the castle Neu Schwanstein in southern Germany. If you're going in the summer, go white water rafting in Austria (its a blast).

Good idea planning so far ahead.
I love trains and trolleys and such. Also, maybe an antique store or two would be fun. Be open to more unusual and off beat venues. Also, if you visit a town/city with any old friends of yours might be fun looking them up.
