Your friend just sounds like a bit of an idiot.
People have spoke about not liking all the Polish immigrants to me while not realizing I'm part Polish, but I can mostly give them the benefit of the doubt they might just not like Polish food or being around people who speak a different language.
Its crazy if it gets to the extent that someone all of a sudden gets nervous about you as a person for being Mexican for no other reason than you being Mexican. It doesn't change anything about you.

That's is such a strange reaction. I didn't realize things were that bad in the states. Definitely don't be ashamed of being Mexican, that's a really cool nationality IMO!

Hehe... I'm in Europe right now, and sometimes people assume I'm American. I'm always like, NOOOOOO I'M CANADIAN, DON'T ASSOCIATE ME WITH AMERICA I HAVE NOTHING TO DO WITH THAT. And then the people will always look considerably relieved and start treating me more nicely. It's kind of sad actually.

Sounds like a waste of an opportunity to be ashamed of being Mexican when there are far more profitable things to be ashamed about.
If you're going to be ashamed of something then at least make it something like being ashamed of robbing a bank etc.
It's typical of fascist governments to heighten exclusiveness in the population. This goes hand in hand with exceptionalism. It means that if everyone thinks that their country and their people are somehow superior to everyone else, then when things go wrong it's the fault of anyone who is slightly different and not the fault of the government.
It doesn't really matter if what is perceived to be the norm really is that common, as long as it looks very different to what foreigners look like. After all, when I lived in Germany I didn't find it particularly common for people to have blue eyes and blond(e) hair. It would be like a fascist government taking power in Ireland and their ideal citizen having green eyes and red hair, which would be quite rare.

Why would this matter, though? If there were problem white people or asian people or middle-eastern people in my area, doesn't mean there's any justification to prejudge the whole group... especially not to start speaking in hushed voices about them. That only worsens the problem!
If you're a great person who's a member of a often-negatively-prejudge group, I think the best thing you can do is sing loud and clear that you're part of that group. Wreck the prejudice. If you pretend you're not who you are because people expect you to be worse than you are, you're reinforcing their discriminatory and incorrect negative view of you. Who gives a crap if people around you think you're Mexican when you are?

I suppose, that I see a difference, between a general prejudice, and if there is an immediate issue with a particular group. Just because it is right, doesn't always mean that it is the wisest choice.

But 'Mexican' is a pretty big group, and probably not the accurate correlating feature of the people you take issue with. Every racial group has many crappy people and many great people. That's textbook racial discrimination to lump a huge amount of good people into a negative classification... and in this case, why exactly? So you don't offend the ears of those around you by mentioning 'Mexicans'? I'm sorry, but anyone who would freak out upon hearing the word 'mexican' is so steeped in racism that censoring myself to pander to their harmful and inaccurate worldview is the last thing I would do.

Humans are the culture that fills their heads. Racism is just a lazy brain's explanation for the difference of mentalities. That's why racist people, or people who judge with race are stupid in my opinion -no offense to your friend-.
Another thing: people who focus a lot with the sight of others, are making a huge mistake, for the sake of themselves and for the sake of others.
