I've never met a fish I didn't like. My favorites are Red Snapper and Walleye, but anything will do.

And I freaking love shell fish.

Great thing about salmon is that you bake it in the oven at 180c / 356f.

A great way to use up your AVB as a nicely roasted herbal seasoning.

The farmers market across the street from me sells those. Young Maine couple. Very good eats with kettlee chips and a Whoopie Pie.

I'm near Omaha. They aren't exactly common.

Absolutely Fresh, Charlies on the Lake, and IIRC there's a food truck I haven't tried that has them.

Bacalhau is the best. It's north Atlantic cod that is preserved in salt, instead of just kept cold or frozen..

There's a small fish called dourada that is so so good grilled.
