I have a question too.
How do I get my saltiness back, and what kind of salt am I ? Am I really salt ?

I don't think the authors of the New Testament were implying that seeds weren't alive, I think that they said that seeds were first alive and then dead and only then turning into a plant, after they died.
I don’t think the authors of the New Testament has in mind any consistent definition of what it means to be alive that could be applied to measure all things, nor would they think such consistent definition useful. They were in the business of persuading, not discovering or understanding.

Nerd alert.
So before the scientific revolution, and the rise of the "scientific age" in the Enlightenment,
the way ancient cultures "told their truth" was by mythology, analogy, metaphor etc.
The term "mythology" did not carry the negative connotation it does today.
There was a "radical" German scholar, named Rudolph Bultmann,

who wrote a number of brilliant books, including "Jesus Christ and Mythology" trying to integrate his concepts of mythology and Christianity.
Virtually every NT studies program in the world, including all the mainline programs in the Ivy League in the US has his books on the required reading lists.

Some seeds do go into a dormant state until conditions are right for sprouting and growing into a plant. Maybe this dormant state was seen as being 'dead' before it was known that dormant is a thing.
