Simply say to them:
(1) They don't observe themselves as omniscient.
(2) They want to absolutely believe that God exists. (Impossible, due to (1))
(3) They don't probably believe that God exists.
So, they possess zero degrees of belief in God.
Lack of belief in God, is atheism.

It doesn't really count as a (de-)conversion if you just tell them they are an atheist under your definitions.

Also, you have made three mind-melting rookie mistakes.
1) This would be a deconversion, not a conversion.
2) Under your pointless definition which no one else in the word uses except you, they already were atheists. So no change has taken place at all.
3) You can still be a religious atheist.
Download the latest Poe update and firmware, reboot and try again.
