You just have to lower the temp and lengthen the cooking time because they'll rise and brown faster.

I was going to make Anzac bikkies because it's Anzac day but because I'm experimenting today I used maple syrup instead of golden syrup and it ended up too dry. I'm thinking of adding an egg or some avocado. Not sure yet. :-)

Fun fact? Pumpkins are not a readily available vegetable in the states as they are in Aus. Just canned form, as far as I know. I wish it was though. Have you ever made a pumpkin pie? I grew up here in 'murrica thinking pumpkins were inedible except as used in pumpkin pie. 

We have all sorts of other squash, though.

I eat pumpkin almost every day. Meat and three vege is my usual dinner.
Any leftover vege gets mixed with gravy and served on toast for brekkie. We call it bubble and squeak.
Pumpkin is also my favourite soup and the easiest to make.

Had a small cup of rompope, a Mexican eggnog that we found in El Tuito, Jalisco back in February. Twice the egg yolk, twice the booze, and three times the vanilla of the homemade eggnog recipe I have. Absolutely delicious and decadent.

Oh yeah, and now I have the recipe. Good thing, we only brought back one liter and it's nearly gone.

In over 20 years of travelling to Mexico annually, even some very out of the way places, I had never encountered this magical folk elixer until this year. WTF? Blinded by mezcal?

In any case, as near as we can recall, the bottle was about 7.50 USD, and it will certainly cost more to make at home with high quality dairy and a decent brandy.

You should try it with soy/almond milk. It would probably be better.
