Jalapeno poppers -- stuff the peppers with Jack cheese, wrap in bacon, and grill over a hot fire for a few minutes.
Portabella caps basted in butter and olive oil, stuffed with diced zucchini and tomatoes, minced garlic, and topped with Asiago cheese. Grill for twenty minutes.

I've used vinegar in cakes too.

I love beetroot. Particularly wrapped in alfoil and roasted.
They are a must for any BBQ.
