Or... she could just be upfront and tactfully let the woman know that it isn't necessary to text her like that.
It's definitely a fine line here. You need other parent's numbers in the event of an emergency - especially if your child is with them or their child is with you. My kids are older and their friends all have cell phones. At this stage - being I have high schoolers, I'd rather have their friends numbers instead of the parents. They'll both be driving in a year or two and I want direct contact with friends for obvious reasons, instead.

No, you don't need to be "friends" with all parents, but you do need to be acquaintances with everyone within your child's social circle, and sometimes you'll have to bear that cost to keep your child happy and safe.
though honesty is good and all, personally I feel it's not always wise to be absolutely honest about your political or religious views especially when it might cause problems for someone other than yourself. Religious freaks are especially dangerous and should be avoided from the start but if that's not possible, I'd be upfront but would still try to keep religion out of things, like telling this woman that I simply don't like memes and selfies and all these new gen crap, so I'd prefer if she stopped sending those. Or you can try another approach of mentioning how you find it funny when adults pretend to be teens by sending memes, while you both are present in a group setting, she should get the hint.

In my experience, it doesn't take more than one stern and sober - "I don't go in for that shit" to stop a religious parent from pestering you. Bonus, they tell the other religious parents.

You're should to be acquainted but not required to be friends.
Tell the mom that you consider it annoying and ask her to stop. If she freaks, maybe your kid should not go to their house for milk and cookies.

If she's sending you christograms, best believe she's telling your kid bedtime stories. Ran into that one once or twice. On one occasion my daughter was so terrified that she tearfully discussed with us how she was never going to have kids....and she's way too little for that discussion - because..SURPRISE Mommy For Jesus went on an anti-abortion rant to a pre-teen. Another happy fun time conversation was trying to convince my youngest daughter that the world was, in fact, not going to end later on today with unbelieving and unchurchly families being separated forever.

I'm not sure it even needs to be a conversation involving religion. Just say hey I don't really like chain texts or meme pictures. I even do that with my friends that I like. I think that kind of stuff is for the internet not my messaging app.
Also my mom was only friends with one of my friend's parents and she was just fine. I never had issues with it and unless she kept it from me she nor the other parents felt it necessary to hang out. They'd just drop us off at each other's houses or say hey want me to pick up so and so since I'm already picking up my kid?
