Look up the London Underground Mosquito, a form of evolution in the wild (there are other examples such as Nylon eating bacteria, or, hell, the common cold evolves significantly every year), and then we've lab induced evolutions like the peppered moth.
If that don't convince him, beat him over the head with his bible until he is dead.

That is the really stupid thing, isn't it.
Demanding to see hundreds of thousands of years worth of evolution take place within 5-10 minutes; and if that doesn't happen, then evolution is "wrong".
I can similarly give the theist 5-10 minutes to produce "God", and if they fail, there is no God.

Denial of evolution depends on ignorance of how evolution works. It's impossible to actually understand evolution and disagree with it, which is why all the arguments against it are dumb.
Regarding this "genetic information" crap, the only appropriate counter to that is to suggest, firmly, that before the evolution-denier continue the conversation, they actually read up on what evolution is, because nobody would make that argument if they actually knew, and it's no use wasting time discussing something that the evolution-denier literally doesn't know a thing about.

B - but... DNA is a language! It's got the letters T, C, A and G! It's god's way of writing you, using words like cat, and act, and... um, tag and... and everything! It's information, guyz!
